SRIRACHA & LIME SWEET POTATO FRIES
Prep time: 15 mins. Cooking time: Approx. 35-45 mins.
YOU WILL NEED...
1X Sriracha & Lime spice
3-4 sweet potatoes, peeled & cut in 1”x 3” slices
3 tbsp. vegetable oil
1-Toss in a boil with oil & sprinkle lightly with sriracha & lime seasoning, or to taste.
2-Place on baking sheet in pre-heated oven at 375˚C. middle rack
3-Bake until golden brown; roughly 35-45 mins. turning over once or twice while cooking.

YOU WILL NEED…
1 x Potato & Veg spice
6 medium russet potatoes, peeled & sliced
½ white onion, thinly sliced
1 cup of cream
Parmesan cheese & other grated cheese of your choice enough for 3-4 layers of potatoes; bread crumbs optional.
1- Add ¼ tsp.-½ a tsp. of potato & veg seasoning to each layer of potatoes (3-4 layers) along with cheese & sliced onion.
2-Top with cream & bread crumbs (optional), cover & bake at 350˚F for 1 hr, uncover foil last 10 minutes of baking.
Guiness Beef Stew
Prep 20 mins. Cooking time 1 hour.
YOU WILL NEED…
1 x Brisket & Beef seasoning
2 lbs stewing beef 1 can of Guinness or your favourite stout. Could substitute Guinness with ½ a cup of red wine.
4 large potatoes, peeled & cubed
1 lg. onion, diced
1 clove of garlic, minced
3 lg carrots, peeled & cut to 1 inch pieces
1- Pat dry stewing beef with paper towel, season with 1-2 tsp. of beef & brisket spice & lightly flour
2- Add 3 tbsp. of veg oil to dutch oven or large skillet
3- Add stewing beef & sear on all sides (don't crowd the pan) then set aside
4- Add onions and garlic, cook until translucent, then set aside
5- Deglaze pan with 1/2 a can of Guinness, bring to a boil,
6- reduce heat, return meat, onions and garlic, cover & simmer for ½ an hour
7- Add potatoes & carrots, add ½ a tsp. of beef & brisket seasoning or salt & pepper cover & simmer for ½ hour longer.
8- Serve & pair with stout or full bodied red wine, serves 4.
Beer Can Chicken
Prep time: 10 minutes. Cooking time: Approx. 1 hour
YOU WILL NEED..
1 x Savoury Chicken spice
1 Chicken Roaster
1 Whole Chicken
1 Can of Beer ¾ full
1 Meat Thermometer
1 Pre-heat oven, grill or smoker to 375˚
2 Apply a thin layer of Savoury Chicken spice on all sides
3 Place open beer can on roaster and put whole chicken over the mouth of the can
4 Cook at 375˚C for 1 hr. or until chicken reaches an internal temperature of 185˚C
5 Remove chicken from the can, carve & eat.
